Unless I have misunderstood the scoring system, on a given difficulty, the lower the Game Stats %age the higher the score? I have two screenshots showing otherwise.

The elo of a game depends on who has played that game. If it was played a bunch of players who all had ELOs of over 2000 then the game itself might have a high % win rate but still cause a big ELO jump for a player with an ELO in the 1700s.
Go to your recent play list and look at the elo of the game itself.
